Ingredients

round chocolate layer cake (9”/23 cm)
4 cup / 1 L
mint chip ice cream
3/4 cup / 175 g
Naturegg Simply Egg Whites cracked egg whites, well shaken
1/2 cup / 125 ml
sugar

Directions

  1. Place cake on baking sheet. Scoop ice cream onto cake, leaving ½” (1 cm) border of cake uncovered around edges. Freeze until ice cream is firm.

  2. Beat liquid egg whites until soft peaks form. Gradually add sugar, 2 tbsp (30 mL) at a time, beating until stiff and glossy. Spread over entire surface of ice cream and cake. Return to freezer until serving time (or bake immediately).

  3. Bake at 450°F (230°C) 4-5 minutes or until golden brown. Serve immediately. Serves 15.

  1. Any favourite ice cream flavour could be used.

Tips: Whipping

If you over beat egg whites and they're too stiff, gently stir in 1 or 2 unbeaten whites to every 5 or 6 whites or add a few teaspoons of sugar and beat again briefly until they are smooth.
