Ingredients
- 2
- Kaiser or hamburger buns
- 2
- thick slices Black Forest ham (about 2 oz/60 g)
- 2 tbsp / 10 ml
- pure maple syrup
- 1 tsp / 5 ml
- soft margarine
- 1 tsp / 5 ml
- water
- 1 cup / 250 g
- Naturegg Omega Plus cracked eggs, well shaken
- 1/4 cup / 50 ml
- finely chopped green pepper
- 1/4 tsp / 1 ml
- each salt and pepper
- 2
- thick tomato slices
Directions
Cut buns in half horizontally. Toast cut edges under broiler, if desired.
Brush ham evenly with maple syrup. Melt half the margarine in nonstick skillet over medium-high heat. Add ham and cook, turning once, 2-3 minutes or until golden. Arrange on bottom half of each bun.
Reduce heat to medium. Add water to egg carton and shake well to mix with eggs. Melt remaining margarine in skillet. Add eggs and let cook for 1 minute. Sprinkle in green pepper, salt and pepper. Cook and stir 1-2 minutes or until softly scrambled. Spoon onto ham on buns.
Top each with a tomato slice and top of bun. Serve immediately.
