Easy Eggnog Granita

Ingredients
- 1 cup / 250 g
- EGG Creations! Fat Free Original or Naturegg Omega Plus, well shaken
- 2 cup / 500 ml
- 2% milk
- 1/2 cup / 125 ml
- sugar, divided
- 1 tsp / 5 ml
- vanilla extract
- 1 tsp / 5 ml
- freshly grated nutmeg
- 1/2 cup / 125 ml
- 35% whipping cream
- 2 tbsp / 30 ml
- dark rum or 1 tsp (5 mL) rum extract
Directions
Beat the liquid eggs with the milk, 1/3 cup (75 mL) of the sugar, vanilla and nutmeg until well combined. Pour the mixture into a 9 x 13-inch (3 L) glass dish.
Cover and place in the freezer. Freeze, undisturbed, for 1 hour. Use a fork to scrape and stir the mixture, breaking up any large chunks, every 30 to 45 minutes until evenly frozen into small granular crystals. (This process will take 3 to 3 1/2 hours. The granita will set faster near the end of the total freezing time.) 3.Scrape with a fork until the granita has an even granular texture before serving.
Meanwhile, use an electric mixer on high to beat the whipping cream with the rum and remaining sugar until stiff peaks form. Spoon equal amounts of the granita into martini glasses or small dessert bowls. Top each with a dollop of whipped cream. Serve immediately.
Tips
Once frozen, the granita can be scraped into an air-tight container and held in the freezer for up to 5 days. Break up with a fork before serving.
