Ingredients
- 1 tbsp
- hot sauce (or to taste)
- 1 cup
- cooked quinoa
- 1/2 cup
- cooked black beans
- 1/2
- avocado
- 1/4 cup
- chopped bell pepper
- 1/4 cup
- cooked corn
- 1 package

- red or green salsa (or to taste)

Directions
Arrange quinoa in a serving bowl; top with black beans, avocado, peppers, corn and Hot Sauce eggs. Drizzle with salsa and garnish with green onion and Cheddar cheese.
Tips
Replace the Cheddar cheese with crumbled feta cheese.
Quinoa can be replaced with cooked couscous, barley, farro or rice.
For a lunchtime make ahead: layer the ingredients into a re-sealable container or Mason jar in the order given. Refrigerate for up to 2 days.
