Apocalyptic Omelette

This colourful, vibrant recipe from Chef Martin Goyotte is jam-packed with flavour, and is a light and nutritious dish for the whole family. Tuck into some succulent shrimp with crunchy asparagus slices and gooey cheese for an added creamy taste.

Ingredients

Naturegg Omega 3 shell eggs
1 tbsp
chopped chives
3 tbsp
butter

Nordic shrimp
1/2 cup
grated cheese of your choice

blanched asparagus spears
salt and pepper, to taste
sriracha sauce, to taste
crushed chili pepper (optional)

Directions

  1. Beat four Naturegg Omega 3 eggs in a bowl, then add the chopped chives, salt, and pepper (to taste) to the mixture.

  2. In a hot skillet over medium-low heat, cook the shrimp with the butter for about 2 minutes or until you see no more water.

  3. Add the egg mixture to the skillet and gently shake the pan while holding the handle until the liquid on top is cooked. If the eggs start to brown but there is still liquid on top, reduce the heat slightly.

  4. Add the grated cheese, asparagus, and Sriracha sauce (optional) to the eggs, then fold the omelette.

  5. Place the omelette on a plate and garnish with crushed chili flakes (if applicable). Enjoy!
