Muffin Pan BBQ Egg Cups

Ingredients
- 12
- Naturegg Omega 3 eggs
- 1 cup
- Pre-cooked meat - bacon, ham, or sausage - of your choice (crumbled or chopped
- 3 slice / 4 slices
- Your favourite bread – white, rye, sourdough
- 1 cup
- Mix of chopped vegetables - mushrooms, peppers, onions, etc.
- 1/3 cup
- Herbs and spices - Parsley, Shallots, Garlic.
- 2/3 cup
- Grated old cheddar or white cheddar (optional)
Directions
Preheat your BBQ to 200C / 400F
Grease the bottom of a muffin tin pan with butter or cooking spray
Place a slice of your favorite bread, cut to size, at the bottom of the muffin pan compartments. (quartered for large slices of bread, 1/3 or 1/2 for smaller loaves)
Crack a Naturegg Omega 3 egg into each compartment
Add pre-cooked meat
Layer on vegetable mixture
Sprinkle with grated cheese
Salt & pepper to taste
BBQ for approximately 3 minutes for a slightly runny yolk, 3.5 to 4 for a firm yolk
Adjust your cooking time according to the BTU power of your BBQ and your favorite type of eggs, i.e. 3 minutes for a slightly runny yolk, 3.5 to 4 minutes for a firmer yolk.
Tips
These can easily be taken to the next level. Elevate your creations by swapping the ham or bacon with prosciutto or pancetta. Replace the old cheddar with Parmigiano-Reggiano for an Italian twist or with Halloumi for Middle Eastern flair.
