Tortilla Egg Muffins

Ingredients

4
small flour tortillas
1/2 cup
toppings of choice (chopped ham, tomato, cheese, bacon, mushroom, spinach, chives)
1 cup
EGG Creations! Fat Free Original
salt & pepper, to taste

Directions

  1. Preheat your oven to 400F.

  2. Lightly grease a muffin tin.

  3. Take each tortilla wrap and cut it into strips (about half an inch).

  4. Roll the strips of tortilla to form small rolls. Place the rolled tortilla strips into each muffin tin cup to create a spiral pattern, resembling cinnamon rolls.

  5. Distribute about a tablespoon of toppings into each cup.

  6. Shake the EGG Creations! and pour it into each cup so that it is a little over ¾ full.

  7. Season with salt and pepper to taste.

  8. Bake in preheated oven for 15 minutes or until the egg muffins look cooked.

Tips

  1. Can be served warm or cold.

  2. Keep up to 72 hours in the refrigerator in an airtight container.
