Ingredients

1 cup / 250 g
Egg Creations Fat Free Original or Egg Creations Fat Free Cheese & Chive, well shaken
1/4 tsp / 1 ml
each dried basil and oregano
1/4 cup / 50 ml
each chopped red pepper and mushrooms
1/2 cup / 125 ml
prepared pizza sauce, divided
2
large flour tortillas
3/4 cup / 175 ml
shredded, part-skim mozzarella cheese, divided

Directions

  1. Lightly coat a medium nonstick skillet with nonstick spray and set over medium heat. Stir the eggs with the basil and oregano. Pour into the skillet; scatter the red pepper and mushrooms evenly over top. Cover and cook for 3 to 5 minutes or until set. Slide onto a plate.

  2. Meanwhile, spread half of the pizza sauce evenly over each tortilla. Sprinkle each tortilla evenly with half the cheese. Cut the omelet in half and place one half on one side of each tortilla; fold over to enclose.

  3. In batches, as needed, toast the filled tortillas in the skillet, for 2 to 3 minutes per side or until golden and cheese is melted. Cut into wedges to serve.

Tips

  1. Use wholegrain tortillas for added fibre.

  2. Add diced ham or pepperoni for a meatier dish.
