Latino Breakfast Wraps
Our EGG Bakes! crustless quiches are delicious on their own but as this recipe shows, they can also be incorporated into wraps or other dishes.

Ingredients

- medium tortillas
- 2
- EGG Bakes! crustless quiches
- 2
- tomatoes, chopped
- 6 oz / 175 g
- corn, canned
- 1/4
- red onion, chopped
- 1 tbsp
- lime juice
- 8
- small lettuce leaves
- 2 to 3
- branches of parsley, chopped
- salt, to taste
Directions
In a hot pan (no oil or butter), on medium low, pour the corn, tossing frequently and cook for 4 to 5 minutes until charred. It looks slightly burnt, but it adds flavour. Set aside.
Cook the crustless quiches EGG Bakes! as directed on the package (90 seconds in the microwave).
In the meantime, make the salsa. In a bowl, toss together the tomatoes, onion, parsley, corn and lime juice. Add salt.
Place the tortillas on a flat surface such as a clean chopping board and lay 2 lettuce leaves per tortilla. Top with some salsa.
Slice the crustless quiches in stripes and add half a quiche to each tortilla. Add them to each wrap and fold them.
Tips
The variations and toppings are endless: add some guacamole, some pepper flakes for a little spicy taste.
