It’s quick and easy and allows you to have fun with flavour combinations. And the one additional bonus? Microwaving eggs means there isn’t a pan to clean. Here’s what you need to know about preparing eggs in the microwave.
What kind of eggs can you make in a microwave?
The microwave can be used to make scrambled or poached eggs, plus fun dishes such as quiches, omelettes and stratas. Here’s what to do for flawless results:
Scrambled
There are generally two camps for scrambled egg lovers: fully cooked or soft and runny. The microwave can prepare either type, depending on your cook time.
Start with an oven-proof bowl and grease it with a bit of oil. Crack 2-3 eggs into the bowl, and whisk them with a fork. Add a pinch of salt and pepper. Microwave for 30 seconds, then remove from microwave and stir to combine. Microwave for 20 more seconds, and stir again. Repeat these 20 second intervals until the eggs are set to your liking. Let stand for a minute before serving. Sprinkle with cheese and fresh herbs, if desired.
Your method will take some trial and error since microwave cooking times can vary greatly among models and wattage. Start with time on the lower end and cook more if needed. That’s better than overcooking your eggs from the start. Since eggs cook quickly, it’s best to use 20 or 30 second intervals. Overcooked eggs become tough, but you can avoid this by undercooking eggs slightly. Let them stand for a minute before serving since the standing time completes the cooking process!
Omelette
You can add your favourite fixings to scrambled eggs and make a microwave version of an omelette. For 2-3 eggs, add 2 tablespoons of water, a tablespoon of your favourite shredded cheese, and a tablespoon of chopped vegetables to a microwave safe bowl or mug. Follow the same directions for cooking scrambled eggs (above). Try any of these fun combinations:
Cheddar + broccoli
Smoked gouda + red pepper
Parmesan + tomato
Asiago + mushroom
Brie + spinach
Ham + Swiss + parsley
Onion + green pepper + chives
Poached
The microwave is a great tool for poaching eggs since they come out perfectly round. Plus – they have the same runny texture as eggs that are poached on a stovetop. Here’s how to do it:
Crack one egg into an oven-safe bowl or mug. Be sure to prick the egg yolk with a fork or toothpick to prevent any explosions. Top the egg with 1/3 cup water and a tsp of white vinegar (the vinegar helps the egg white solidify). The water needs to completely cover the egg, so add more if needed. Cover the bowl with a microwave-safe lid or plate. Microwave for 30 seconds. Give it a gentle poke with a fork to test for doneness. If it’s not to your liking, microwave for 10 seconds longer. Remove from water and season with salt and pepper. Serve on toast with your favourite condiments. Repeat for each egg, since it works best to just poach one at a time.
