Ingredients
- 1/4 cup / 50 ml
- fresh whole-wheat breadcrumbs
- 1/4 cup / 50 ml
- shredded part-skim mozzarella
- 1/4 cup / 50 ml
- chopped fresh basil leaves
- 1 cup / 250 g
- Egg Creations Fat Free Original, well shaken
- 3
- cloves of garlic, minced
- 1/4 tsp / 1 ml
- ground black pepper
- 1 cup / 250 ml
- baby spinach leaves
- 1 cup / 250 ml
- thinly sliced cooked chicken or turkey breast
- 2 tbsp / 30 ml
- shredded Parmesan cheese
- 1/3 cup / 75 ml
- pasta sauce
Directions
Preheat the broiler to high. Meanwhile, toss the breadcrumbs with the mozzarella cheese and basil; set aside. Whisk the eggs with the garlic and pepper.
Lightly coat a medium, nonstick skillet with nonstick cooking spray and set over medium heat. Pour half the egg mixture into the skillet. Cook, covered, for 1 to 2 minutes or until set on the bottom.
Arrange half the spinach, chicken or turkey and Parmesan cheese on one side of the omelette. Fold the other side over to enclose the filling; cook, covered, for 1 minute. Slide the omelette onto a greased baking sheet. Repeat with the remaining egg mixture, spinach, chicken or turkey and Parmesan cheese to make a second omelette.
Spread an even layer of pasta sauce on the top of each omelette and sprinkle with the breadcrumb mixture. Broil for 2 minutes or until crumbs are golden and cheese is melted.
Tips
Serve with whole-wheat garlic toast and a tossed green salad to complete the meal.
