Mediterranean-Inspired Breakfast Sandwich

Shake up your breakfast sandwich with roasted red peppers and zucchini for a Mediterranean spin.

Ingredients

1-2 tbsp
hummus
1 handful
baby spinach
1 tbsp
roasted red peppers
2-3 slice
zucchini

English muffin

Directions

  1. Toast English muffin in the toaster.

  2. Microwave egg patty on high for 75 seconds.

  3. Add heated egg patty and rest of the ingredients to bottom half of the English muffin.

  4. Spread the top half of the English muffin with hummus and place bun on top. Enjoy!

Tips: Hard Boiled

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
