Chopped Egg Salad Sandwich
Try our egg-cellent twist on the viral chopped sandwich trend. Perfectly seasoned, deliciously creamy, and oh-so-satisfying.

Ingredients
- 4
- EGGS2go! Omega 3 Hard Boiled Eggs
- 1
- Ripe avocado
- 1 tbsp
- Mayonnaise
- 1 tsp
- Dijon mustard
- 1
- Stem of green onion
- 4 slice
- Your favorite bread
- Salt and pepper to taste
Directions
Place the hard boiled eggs, avocado, mayonnaise, mustard, green onion, salt, and pepper on a large cutting board.
Use a large knife to chop and mix all the ingredients together until they are finely combined and the mixture reaches your desired consistency.
Toast the bread slices.
Evenly spread the chopped egg and avocado mixture onto a slice of toasted bread.
Top with the remaining toasted bread slice to complete the sandwich.
Cut the sandwiches in half, if preferred, and serve immediately.
Tips
Add lettuce and tomato slices for some colour and crunch!
