Ingredients
- cooking spray
- 1/4 cup / 50 ml
- seasoned dry bread crumbs
- 8 / 400 g
- Naturegg Nature’s Best shell eggs (or Egg Creations Whole Eggs Original, well shaken)
- 1 cup / 250 ml
- smooth low-fat cottage cheese
- 1 package / 300 g
- frozen spinach, chopped, thawed and squeezed dry
- 1/2 tsp / 2 ml
- lemon pepper
- 1/4 tsp / 1 ml
- pepper
- 1/4 tsp / 1 ml
- hot pepper sauce
- 1/2 cup / 125 ml
- Cheddar cheese or Swiss cheese, grated
Directions
Spray a 2 quart (2 L) square casserole dish with cooking spray.
Sprinkle bread crumbs to coat bottom and sides of dish. Set aside.
Whisk eggs with cottage cheese, spinach, lemon pepper and hot pepper sauce.
Spread over bread crumbs.
Sprinkle with shredded cheese.
Bake in a 350⁰F (180⁰C) oven for 20 to 25 minutes or until a knife inserted near the centre comes out clean.
Let stand for about 5 minutes before serving.

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
