Carrot and Mushroom 'Burger-Wiches'

Ingredients
- 2-3 tsp / 10-15 ml
- vegetable oil (approx)

- large carrots, coarsely grated

- small onion, chopped
- 1
- clove of garlic, minced
- 8 oz / 250 g
- mushrooms, chopped
- 2 tsp / 10 ml
- chopped fresh thyme or 3/4 tsp (4 mL) dried thyme leaves
- 3/4 tsp / 4 ml
- salt
- 1/2 tsp / 2 ml
- pepper
- 1/2 cup / 125 ml
- fresh bread crumbs (about 1 slice bread)
- 1/2 cup / 125 g

Directions
Heat 1 tsp (5 ml) oil in large non-stick skillet over medium heat. Sauté carrots, onion and garlic about 5 minutes or until softened. Remove to a bowl. Increase heat to high.
Add mushrooms to skillet. Cook and stir 5 minutes or until browned. Stir in thyme, salt and pepper. Add to carrot mixture; cool to room temperature.
Stir bread crumbs and liquid eggs into vegetables. Using ½ cup (125 ml) mixture per patty, form into 4 patties.
Heat 1 tsp (5 ml) oil in skillet. Add patties to skillet, flattening with back of spatula until ¾” (2 cm) thickness. Cook for 3-5 minutes or until bottoms are golden, adding more oil to skillet, if necessary. Turn. Cover and cook about 4 minutes longer or until golden. Serve on buns.

Toast buns under broiler, if desired.
