Ham and Egg Tarts in Tortilla Crusts

Ingredients
- 8
- small whole wheat tortillas
- 2 cup / 500 g
- EGG Creations! Fat Free Original or Naturegg Omega Plus, well shaken
- 1/4 cup / 50 ml
- milk
- 1/4 tsp / 1 ml
- each salt and pepper
- 1/2 cup / 125 ml
- finely chopped ham, (about 3 oz/90 g)
- 1/4 cup / 50 ml
- each finely chopped red pepper and green onion
- 1/2 cup / 125 ml
- shredded low fat cheddar cheese
- salsa (optional)
Directions
Pinch edges of tortillas together to make a tart shape and fit into lightly greased large muffin cups; pressing into shape of muffin cups.
Whisk liquid eggs, milk, salt and pepper. Stir in ham, peppers and onion. Divide mixture evenly between tortilla cups, being careful not to overflow edges.
Bake at 350°F (180°C) 30-35 minutes or until eggs are set. Sprinkle cheese over each tortilla cup.
