Spicy Sausage and Potato Hash
For a milder hash, substitute mild or bratwurst style sausages for the spicy Italian.

Ingredients
- 4 tsp / 20 ml
- vegetable oil

- medium tomatoes, thickly sliced
- 1
- medium onion, thinly sliced
- 1
- small clove of garlic, minced
- 12 oz / 375 g
- hot Italian Sausages, cut into 1/2” (1 cm) chunks
- 3
- medium red skinned potatoes, cooked and cubed
- 1/4 tsp / 1 ml
- each salt and pepper
- 1 cup / 250 g

Directions
Heat 1 tsp (5 mL) oil in large nonstick skillet over medium-high heat. Cook tomatoes, turning once, 2 minutes or until softened. Remove to a platter, arranging in single layer.
Add 2 tsp (10 mL) oil to skillet. Sauté onion and garlic 3 minutes. Add sausages to skillet; sauté 2 minutes or until browned.
Add potatoes, salt and pepper; cook, stirring occasionally, until crisp and browned and sausages are cooked through, about 5 minutes. Arrange on top of tomatoes.
Reduce heat to medium, add remaining 1 tsp (5 mL) oil to skillet. Pour in liquid eggs and sprinkle with green onion. Cook and stir for about 2 minutes or until softly set. Add salt and pepper to taste. Arrange on top of sausage mixture; serve immediately.
