Ingredients
- 1 package / 88 g
- EGGS2go! Omega 3 Hard Boiled Snack Pack, sliced
- pinch
- each dried dillweed, salt and pepper
- 1
- avocado
- 2 tsp / 10 ml
- grainy mustard
- 2 slice
- pumpernickel bread, toasted
- 1
- radish, sliced
- 2 tbsp / 30 ml
- crumbled goat cheese
- microgreens, sprouts or baby greens
Directions
Sprinkle eggs with dill, salt and pepper; slice and set aside.
Mash avocado with grainy mustard. Season with additional salt and pepper to taste (if using).
Spread avocado mixture over pumpernickel toasts. Top with sliced radish and sliced eggs. Garnish with goat cheese and microgreens. Serve immediately.
Tips
Replace the pumpernickel bread with rye or whole grain toast.
Top with thinly sliced smoked salmon for a gourmet garnish.
